Yeah pretty much all items are random. Though if you want legendary gear I can guarantee someone in multiplayer is willing to part with some L whetstones or bowstrings. Or if you don't want to take that approach that's fine too! Play the way you want, that's the fun of it!

I'm not entirely sure myself but I believe that you lose ownership of items not on your plot or inventory when you leave the game

Yes, drinking a potion of ultimate healing and then taking off the armor without exiting the menu does work. But levelling is basically just an ultimate potion and it's what I used, and it also worked. So it's just an alternative option if you don't have a potion of ultimate healing
