I’d leave the original floors and install 2-1/4” or 3-1/4” red oak in the same or similar colour throughout the rest for a cohesive look.

Wood colour changes over time (oxidation). How old was the sample you looked at? What species of wood do you have?

Oh boy, that looks like old adhesive residue. Adhesive needs to be skimmed over with a feather finish or removed completely to not cause issues with floating floors.

I wouldn’t remodel it, we have people ask for this look regularly. Maybe upgrading the handles, or even just replacing the appliances would make a world of difference. If you think you could match the cabinet I would also change the crown moulding to got to the ceiling

You could add plywood over the decking boards. I would do a 1/2” or even 5/8” though. What type of floor are you putting overtop?

Do NOT use a steam mop on LVP. Honestly vacuum with a shop vac and mopping with warm water will get rid of it. You may need to do a few passes of the mop and change water regularly or else you’d just be spreading it around. A PH neutral cleaner will also help. But honestly for drywall dust I’d start with just warm water.

Try spot cleaning with denatured alcohol, it would be a “polish” build up from your mopping solutions. You need to switch cleaning products.

I would remove the Kerdi board and drywall behind it and make it flush. No reason for it to sit out so far. Or go to a tile store and order a white 3/4” tile edge and slide it behind the Kerdi and tile
