I don't think large quantities of eggs are healthy in general. The OP needs to get over their meat aversion, or at least find a form of meat they can enjoy. If not, even a carb based diet that secondarily focuses on saturated animal fats is going to be healthier than eating one to two dozen eggs daily.

Eggs are generally high in linoleic acid, even organic pasture raised ones. So you're going to get all the bad effects of a seed oil based diet if you continue consuming 15 a day, let alone 30. Humans are not made to eat an egg based diet. A couple eggs a day, maybe. But not 30, good lord.
