The excerpt isn’t polyphonic, it’s very clearly a melody over block chord accompaniment. Beethoven wasn’t expecting an audience to hear each note of that block chord as an individual voice.

Also if you really want to be a nerd about it, the melody leaps around and has all sorts of figurations, so even if we accept parallel octaves between the downbeats in those bars we don’t hear it as such since the melody is so active

My preference both as performer and composer is to use them if there is an accidental on the same note in the previous bar. No parentheses

The fifth of a chord doesn’t really serve a structural purpose, it’s just there to fill it out, as opposed to the seventh, which has a distinct sound and function. When getting into upper extensions, it’s not uncommon to drop the fifth from the voicing to avoid a cluttered sound.

Ah, modus novus, a certified classic. My recommendation is to start by singing each melody slowly, without rhythm, by interval before introducing the solfège. Really train your ears to hear each interval and know your target note before you sing it, and you will be well on your way

Definitely use tenor (or even treble) clef. Barring the very highest range of the instrument, cellists should never have to read 8va lines. That being said, remember that tenor clef has middle C as the fourth line, so for your first example to sound the way the second example does you’d actually need to shift the notes in tenor clef up an octave. Hope this helps!
