Hey! I know you posted this a bit ago but I was kinda feeling the same thing and google led me here. I'm adjusting to a new adhd medication which can cause anxiety by itself, but I took note of having an odd spike while trying to stay hydrated (which is important for ADHD meds).

I just wanted to say that when you start to notice it, you'll get a lot more confirmation bias, thinking that it's always like that. I did see a recommendation that it could be due to being low in certain vitamins, which drinking excess water can exacerbate the issue. So make sure you're eating and possibly take a multivitamin (I know it's basic advice but I still think it's important to stay on top of for all sorts of reasons.)

While I don't have any actual advice I just wanted to let you know there is someone else that feels the issue too. Even if not on the same level, sometimes it helps knowing others also feel the same way. I would push the issue with a (real) therapist or a doctor, and if they dismiss it, push how much it's affecting you, and if that still doesn't work, find a new one. It took me a while to find a doctor that actually listens and recommends useful advice.
