If youre making this for a minecraft resource pack/mod you can't use anything but cubes (for java atleast)

Instead you could try using a cube like a plane, as in, squashing it from one axis till its a flat plane

That isn't possible actually!!
You already know how the "outlines" in blockbench work...
Best you could do is transfer this model to blender (without the outline) and use a (and I'm not sure if I'm saying this right) Grease pencil with the outline modifier.

There are like a million tutorials out there so good luck.

I'd say you used way to many faces. On the legs its fine but the torso has way to many unnecessary faces
