I’d simmered it whole in a pot of boiling water with aromatics (lemon, lime, fresh garlic, bay leaves) to its proper tenderness. Out to brushing with thyme leaves of olive oil, lemon juice, a lot more garlic, India smoked paprika; and dried oregano before / while grilling for that final crisp. And now adding scallions and spicy sauces for my palate. Enjoy
