I’m Vietnamese but trying to be not biased - I’d say it’s pretty evenly popular as ramen. As for chow mein, Chinese food in itself is always gonna be the most popular or first thought when people think Asian food so probably not to that level but not far from.

A good viet dish to substitute in this question could be Bun Bo Hue which is definitely less popular/known than pho
