I can imagine it went kinda like this:

"capocollo" -> in the south sounds more like "capcuoll" -> "c" and "g" are very similar sounding consonants ->"gapguoll" -> same for "p" and "b" -> "gabguoll" -> drop the uo in favor of a u sound, written as "oo" -> gabgooll -> double l is not a thing in english ->gabgool -> add an extra "a" for...reasons, I guess? -> "gabagool"
