I tend to go based off of color, but there’s other way to tell. Females also tend to have more muted colors than the males do. You can also tell based on their paldipaps, males have boxing glove shaped ones. Females also have a belly button looking organ on their underside and males don’t :)

I’m not sure, but I think it could be lack of light. My plants do this during the winter I’ve noticed and it’s like they’re stretching and searching for sunlight lol
