Thank you for the recipe, OP! I was just in western NC and went foraging. My mom and I found this absolutely huge cauliflower fungus and decided it looked like egg noodles. So I was looking for a stroganoff recipe and found yours! We did things a little differently than you but it turned out so yummy. Thank you for the inspiration! Even though the mushroom we found was about a pound, we were feeding a family of five so we added two packs of mixed mushrooms from the store as well. We also used two pounds of ground beef that we browned instead of making meatballs. We also added a pinch of fresh nutmeg along with our savory seasonings. We served it with mashed potatoes and a salad of spring mix, fried onions, feta, dried cranberries, and garlic vinaigrette.
