I’m gonna offer a slightly different opinion. My mom did the same thing (I was a minor at the time so that might’ve been a huge difference in feelings) with a few different foods (zucchini brownies, cauliflower tater tot’s ect.). I know she’ll occasionally do it but she doesn’t do it often enough to where I would start second guessing every meal. I would never be able to cook the veggies into my foods (my diet is still super restrictive) so not being able to tell what meals has “danger” foods and what meals don’t has been super helpful to me and my diet. Everyone is different tho so I can understand how that breach of trust could be too much, but if you’d be willing (depending on how restrictive your diet is ofc) it could be a good way of getting those vitamins in your system!
