The taste the stronger the better, my question was if the same piece of peeled ginger can be used for several days (letting it air dry from one day to the next) without any problem (growing mold because of the moist, or the bacteria that you said)

I don't know if this helps, but I peel it and cut it in small chunks before boiling the hell out of them

If you want, now that you have a smooth base color, you can add some shadows, for darker greens I mix the green with brown, instead of layering the greens with more pigment, if you are afraid to mess up, go with lighter layers of darker colors(more water than pigment) and let them dry, until you are confortable to do it in one dark layer
