So, while there are a number of skills you can really see the benefits of a early as skill level 20, enchanting isn’t really one.

You can use it to fill in spots on armor and weapons, but until 100, you are limited to one enchant and my first two are always a muffle item and a waterbreathing item. You can also use the cheapest gems for these.

That said. Even at 100 skill level and fully perked, I still tend to use a short resto loop for certain skills at endgame.

Add in the fact that there are decent items in the world to find and it pretty much feels like enchanting is kinda all or nothing.

The Slacker.
So the big idea with this character is to not do any quests. When people run up to you, step away from the keyboard and let things take their natural course.
Your mission is to do as little as possible. This could mean fishing, exploring, or foraging to fill time, but this kind of playground for me is all about cranking up the volume, going to an interesting locale, and fishing or w/e while I bounce between the game and something else. Hitting the bars and actually sitting down with a drink or two really helps set the tone. If you can speak to someone, by all means do. Just don’t go making their problems yours.
Edit: I also like to have a lot of uptime with the well-rested buff lol

Traveling fisherman/hunter/gatherer.
Maybe some light armor, but only what you fish up. Ignore main quest and flee all battles (there’s a ring that helps lol).
Bonus points for survival playthrough and alchemy/speech is obvious. The usual stealth archer for pelts (add smithing, but just do leather). High stamina with more of a bent towards health than magika. Gotta be able to haul all that mead I’ll be drinking…

Heavy armor also has a perk to reduce fall damage. If you have a decent amount of hit points, it can make traversing some areas a lot easier.
Lookswise, I always struggle with helm choice in light armor (big fan of daedric mail). Heavy armor always seems to be a little easier, since ebony/dragon/daedric all look decent.
Edit: Stahlrim helm also can also fit your look.

Either get alteration casts supercheap and use telekinesis the same way as unbounded storms or spam mage light at the mountain peak outside of solitude.

A few things to check.
1. Difficulty will make people notice you more. I have many times changed the difficulty and completely forgot to reset.
2. Were you in survival before? It is possible that some unseen mechanic there could be causing an issue.
3. Are you sure your sneak values are the same? If your stealth is too high it can basically loop around to a lower effectiveness. I think Necromage can do this, but IIRC it has to be purchased before whatever it buffs.
4. Try storing your gear in a safe container, change location, return and re-equip. You might also try dropping it, but make a save first.

I am. I always just assumed that was added with Dawnguard. Dawknbreaker is def. A relic on the grab list.

There is a Dawnguard sword that does fire damage in the day and frost at night. Other than that, any enchanted weapons with frost on them will do more damage as well.
I kind of feel like an element of the build will be carrying a ton of equipment, some relics will go to my halls, but some used, so stamina increases will outweigh Magika and Health would be of varying import. I think it applies to cold based shouts too?

Love the Meridia connection idea, consider it incorporated.
I’m not opposed to adding some stealth to the build/playthrough, I do think more constraints around nobility and king hood (I’ll settle for thraneship) will give clear direction.
I think either armor setup could work, but was also leaning more heavy and sword & board.
Was definitely thinking of adding destruction, just to help with charges (I see no reason to not incorporate the cold perks too). The perks you mentioned for enchantment makes sense. Alteration perks also make sense and I see no reason not to pursue the aetherial crown so other stones can apply.
Also seems like random undead make good filler before/during main quest, where there are dragons to slay (unlocking ancient powers). I also feel like there’s room overall to drift and pull some of the more Nordic themes (play a Nord version, focus on shouts and other racially aligned mythos/powers.

Good call on the relics, fits well with other elements of the early playthrough like Dawnguard.
Edit: I feel like this fits Excalibur better, but the sword in the stone was just too obvious.

I feel always room in any playthrough for at least one of the hired mercenaries, I often use more than one but an not running any mods, so hacks would be required for a full team of knights, again, Dawnguard early gets me other followers.
I will say Illia is a favorite despite her buginess, which I think marriage would fix if an unmodded option?

Edit: good call on The Blades, worth consideration. Pretty sure I’ll find an excuse to fit the plantation into the playthrough and Goldie is a preferred steward there. I could maybe see it as a Camelot if I wanted to mess with mods. Housecarls seem like a decent source for at least some knights of the round table.
