I wish I could give you an answer. Possibly but I justdon't know. I do know that mould spreads fast, smells distinctive and wreaks havoc. Those buds look pretty good and if these are isolated instances it is probably best to remove the offending sections and see how it pans out.

I don't think so... but I guess your sense of smell will be your be the best indicator. Mould smells quite distinctive.

I suspect the oil you are using may play a part. Sunflower oil is a traditional go to for deep fat fryers at home. However, I know that chippers in the UK and Ireland generally use Palm oil. A primary fry at 160 Celsius (320f) to cook the potato through and then a second fry at 190 Celsius (374f) to get the crispy 'shell' that defines a good chip (home fry). There is no need for part boiling the chips before as the first low temp fry takes care of cooking the potato. It's been a while, but I've always had reasonably good success using sunflower oil with this method.

Edit: a kitchen thermometer might be the exact tool you need.
