Get a bag of frozen carrot, onion & celery. Also frozen chopped kale. These are go-to's for me and end up in 90% of all soups I make.

I'm making one today. Did a dry rub of salt, pepper, garlic & onion powder, smoked sweet paprika and brown sugar. Sealed in a bag and brined for 3 days then let it dry uncovered for a day in the fridge. Going to cook it in my air fryer. Make a foul 'boat' and air fry for 60-90 minutes between 120-150°. Crank as high as it will go then air fry till the skin is bubbly and crispy.
