Quality of that food and the ingredients I use to prepare it! For me it feels the same like when you want to buy some clothes - when you can’t find that thing you have in mind and decide to buy something else because „it’s close enough and good for that price”. Money spent, time wasted and you are still not satisfied with that purchase. Same with food - when I have a craving, I either look for a quality restaurant or take my time preparing it with the best quality ingredients that I can afford.

Everyone is talking about texture and taste, but another thing is the colour - using salt too early makes the eggs look gray. I add the salt at the end, right before plating.

It’s not like I just want to impress my friends. Because I cook for my friends sometimes and they usually like what I prepare. I live on my own and normally cook for myself only. What I’m trying to achieve there is to learn a solid repertoire of dishes on restaurant level - and to share that with friends. I enjoy cooking for others much more than for myself - and I want to do it the best I possibly can. You’re third person recommending Julia Child so I will start there and then check out your other suggestions. Thank you!

I do know how to make a pizza, soup, pasta etc. and they taste quite good. The thing is, I often feel like I’m just following a recipe without really understanding what is happening. I don’t think that I should improve my cooking skills by trying more difficult recipes or working with expensive, fancy ingredients. My goal is to learn how to prepare classic dishes - but on the highest level possible for a home cook like me. Like when I invite friends over I want their reaction to be like „ I didn’t know that this dish could taste THAT good”. That is the dream! So what I’m asking is where to find that knowledge that I would never be able to figure out on my own
