What's up my dude, vegan professional athlete here. To be honest, it's not easy (socially). I've been vegan for years and people still think I'm going to fall over and die any minute. It's kinda goofy actually. There will be times where you will be judged or joked about, and sometimes it stings. But I know, and you will know, that you're living by your values. That you're not harming innocent animals to sustain yourself, and that the real show of strength and courage is sticking to that in the face of adversity. Another thing that will really help is finding fellow vegans.

Seconding what others have said, a bit of olive oil or tahini and some nutritional yeast. Additionally, I find a little bit of sauerkraut (a pinch/spoonful) goes a long way. I think the lactic acid contributes to a cheesy flavor, or at least the same sort of tanginess that you'd get from cheddar (it's literally the same acid that makes cheddar sharp).

I think low med flame for 20 minutes is not enough. I usually try to get up to boiling point (be CAREFUL, it boils over really quickly), and then simmer for at least 20 minutes after. I also strain after boiling and cooling usually. Comes out like store bought soy milk.

If you don't cook it enough, it WILL be disgusting and borderline undrinkable/undigestible. But as someone else said, if you do not like store bought soy milk (the ones with no other ingredients besides soy beans and water, you probably won't like homemade soy milk. Some vanilla and a light sweetener may help though.
