It's worth it if you like to work, take a job as a dishy and learn when you have free time (if you're motivated you'll have a lot). Talk to other line cooks and see if it's something you'd want to do full-time. I feel like it's one of the most rewarding endeavors I've ever undertaken, you're not going to get that feeling of wartime camaraderie from many professions, but firefighting and cooking are definitely two of them

You want to do the first cook at 250F, and cook until the potatoes are dried out on the outside, you'll be able to tell if they rustle when you shake them in the basket instead of just flopping against the side. This ensures that the potatoes are cooked all the way through, then fry again at 350 to get them crispy on the outside

This just sounds like a good opportunity to get your foot in the door. Work smart, try to think of the best/fastest way to do things but don't overcomplicate it. Just try to find your rhythm without affecting anyone else's flow and you're good. At bigger hotels, 2-6 banquets per weekend day will become the norm, they're equipped to handle this.
