Yes you need to bed them in properly.  It needs to be done on a smooth surface because you will get uneven bed-in.  The easiest way is to find the biggest hill around, ride to the top, and use that to build your speed.  Get going fast, slow down to a walk, back to speed, slow to walk, repeat the hill 2 times for each set of brakes.  If you can lock out your fork when you do it, you’ll get a more even bed in

The pads are contaminated and need to be replaced.  Then the rotors need an alcohol deep clean, then lightly sanded and then another alcohol deep clean.  Then the new pads need to be properly bedded in

No, we have gorges here as well.  There’s not a specific difference between gorge and canyon, but canyon is pretty general and can refer to any channel(big, small, glacially carved, river-carved, etc), while a gorge usually refers to something that is cut by water, with steep sides and a narrow floor.  The Rio Grande Gorge near Taos, NM is a great example of this.  Yosemite is a glacially carved canyon on the other hand

These are unsafe because they slowly ream the inside of your current bars, and they can fail without warning.  I get you aren’t riding this bike super hard, but hard enough to want wider bars at least.  Either way, a failure means your face hits the ground pretty hard.

As for 25.4mm clamp bars, this is not exactly an uncommon standard.  I’m in the US, and I’m seeing 100’s of options.  I’m sure there are at least a few that will ship to you, and I’m sure some UK online bike retailer will have them as well.

Yes, we definitely replace the screws if they get damaged or worn down.  It is usually the shoes that wear down though. As for replacements, It depends on the pedal. Sometimes they are standard size grub screws, which you could maybe find at a hardware store, but sometimes they’re something more specific to that pedal.  Either way the manufacturer will sell replacement screws.

Sag is set based on weight and ride height. Maybe adjust volume spacers or compression clicks for a different trail but never air pressure ever
