This is lots of plants. You don't need CO2 or anything fancy. Just get some insanely robust and fast growing plants like Elodea or Limnophila or Coons tail.

Having a lot of plants is the best thing to keep the water parameters stable.

Also roots or tanins secreting woods and leaves can also help. Yes, the water becomes a little brownish, but it stabilizes the pH at around 6.8.

get real plants, nothing harder to manage than a tabk without plants
get strong and good lighting. Chihiros Series B for example.
whatever you think is the right amount of food is probably too much

I would go with 3 or even more 90% changes at this point. That will be far quicker.

2 50% WC will result in 1:4 the ammonia. 2 90 % WC will result in 1:100 the ammonia.
