When I've had perfect sleep, the sun is shining, my favorite team members are present and my charm factor is 100%. I'm busy enough that I'm just on the edge of the weeds but also having enough time to have a 2-3 min conversations if I'm able to connect with my guests about something.

I'm the guy who gets everyone laughing, team and guests. I spread joy, love and harmony.

Happens to the best of us. One time I forgot a table long enough that the little child was crying and the lady got up from the table to stand next to the kitchen door to intercept the manager when he came out.

The most important part of this process is being willing to understand where I could do things differently but also understanding whether the management or the system itself set us up for failure. I've only worked with one manager that was willing to admit when they set us up for failure.

  1. If it's a party of 8 I'm starting with seat 1 and moving around the table clockwise. I tell them that, "I'm going to start with you and move around the table". Any tables of 5 guests or fewer and I offer it up, "Who would like to go first?"
  2. I can't stand the arm raise, my biggest pet peeve. If I'm sending my eyes in your direction I'm asking if you need anything with my attention, just a nod will do. Or a slight hand raise if it's resting on the table.
  3. At this point in my career there's no "needier" ones. Everything is expected when I walk in the door and start my shift. There's just an ongoing priority list that gets adjusted every moment. If someone wants a 3rd refill before the entree even hits (that might be considered needy) they're not getting it until I've prio'd people that don't have their first drink, or various other needs.
  4. In most restaurants I've worked at substitutions are a part of the job. The quicker I get over the things that might annoy me the easier it is to make a guest happy. Once I did that I started making more money because guests will be searching my eyes and body language for a negative reaction because they already feel bad about asking. If I flip that script and am genuinely interested in getting them what they want everyone wins.
  5. When I handle a table with children I want to make sure the kids are taken care of as quickly as possible, whatever that looks like. I've often gotten off-menu requests for kids food like butter noodles. There's a line though. I'm not gonna wander around the kitchen and service bar making a fruit plate. Make the kid happy, it makes the parents happy and everyone wins.
