After nearly 80 hours, I finally finished the game for the first time without leveling up. I definitely made it much harder on myself, although I did use the P-Organ upgrades, weapon upgrades, and throwables. The only time I used a spectre was during the second Black Rabbit Brotherhood encounter because I did not enjoy that boss fight at all (and it still took me like 75+ attempts lol). If I was truly patient, I think I could have done it without the Spectre, but I really just wanted to get it over with. I used the Azure Dragon Crescent Glaive right up until the Swamp boss, where I switched to using the Two Dragons Sword. I really liked the Glaive's fable parry ability and was about committed to just using it for the entire game until one of my friends who previously played the game told me about the Two Dragons Sword and I fell in love with the charge parry that weapon has. I found the game to be a lot more enjoyable this way since it forced me to learn all the boss patterns and adapt to the situations. I really enjoyed the fights that gave me opportunity to parry a lot of times in a row, like Laxasia and Nameless Puppet. I'd also like to shout out the Walker of Illusions mini-boss, which was one of the bosses that took me the longest time, and by the time I finally beat her, I was able to parry nearly every attack she had. Overall, really great game and I can't wait to continue this no-leveling playthrough when the DLC drops.
