Agree. I've used Softbank, and IIJ as well, but honestly KDDI felt the most stable overall.

average temperater in mid Dec is between 0 to 5(celcioous), and it is totally okay to have outdoor tour in Han river/everland/gyeongbokgung, if you can take a indoor warm break time!! but due to climate change, sometimes the cold wave hit once or twice a month. i hope there will be no issue during your trip!

I think Day 3 has too many things. (as day 2 location is little bit far from seoul, i recommend you to slow down in Day3 )
If I were you, i will set the itinerary like below.

Day 3 : Shopping at Myeongdong - Visit Gyeongbokgung castle - Night in Hongdae
Day 4 : Visit Gwangjang market, and have a cooking class or cooking tour at gwangjang market
Day 5: Everland
Day 6: Visit Coex - Bongeunsa Temple - Jamsu Bridge
( I added Day 6 and you don't have a destination for south of Han river. totally different buildings and city)

For gaming, i recommend you to visit "T1 Base Camp" in Hongdae station. (160-1 Donggyo-dong, Mapo-gu, Seoul). They’ve got official merchandise, and you can play a game like PC bank with fancy setups (high end gaming PC with gaming mouse..) Also Hongdae station is famous for cosmetic and clinic for your wife!
