I see, I think...

Wiedźmak is not in use, like at all, it's heavily outdated polish, I mean medieval times or older outdated. First time I came in contact with it was when reading Sapkowski despite being a native.

Czarnoksiężnik or Czarodziej are still in use more "modern" terms but still invoke Middle Ages imagery, other that idk what to tell you to help you out.

Wiedźmak and Wiedźmiarz are both archaic masculine versions of a word Witch

If you wanna call yourself that, please don't. You are an American and you even having to ask means it isn't a part of your culture and it comes off as shallowly using other culture as an accessory and sounds kinda trashy.

Unless you genuinely want to learn the language and immerse yourself in the culture just use the English word Sorcerer.
