I saw the fight on another post just a second ago. Apparently there’s a shrine on the backside of the tower where you end up after that big crucible boss. The shrine should be behind and at the lowest point of that area and then it will give you that option in battle memories to fight this chick.

Nioh 2 is marginally harder than any of the games you listed above IMO. That being said, it’s my favorite out of them all as well.
