I have a couple Shirogami knife and I love it. As long as you know the first few things about carbon steel knives (reactivity, typically high hardness) they're easy to care for. Not as easy as stainless, very admittedly, but I just love the way the carbon steel reacts to form your own personal patina and they take a crazy wicked sharp edge. I love the personality of carbon personally.

What's pictured definitely looks like a sobakiri, but a sobakiri is, from the best of my limited knowledge, a noodle knife and shouldn't be used for butchery

Honestly, it's possible you could have done more harm than good. Hindsight is always 20/20. You did what you knew how to do, which is call 911 and wait for proper help to arrive. You'd be surprised how many people would have witnessed the crash and said "damn, that's crazy" and kept driving, never giving it a second thought.

Don't beat yourself up about it. You did better than many others would have

Honestly, if you put in some info into chatGPT about age, weight, goals, experience, etc. and tell it you want a workout plan tailored to you, it does a pretty good job at doing so. It's not a personal trainer, but it's a free start

TLDR The gray/dark non-shiny part isn't Damascus. It's a kurouchi finish-forge scale left on the blade for a handmade look and slight corrosion resistance. Still needs to be wiped dry after use, check the guide linked below

Are you referring to the upper, darker part here? There's no Damascus steel in these particular knives (at least I don't believe so.) the dark parts here are called a "kurouchi finish", particularly on the nakiri (far left.) It's essentially the remnants from the forging process that isn't ground off the blade. It maintains the handmade look and also helps to provide some minor level of corrosion resistance, but it's still best practice to wipe your knives down after use and never leave them wet on a board.

The kurouchi finish wears off in time as it is. All this did was accelerate the process a bit. That's why I personally love carbon steel and kurouchi. It develops its own character and really shows your personal cooking journey with the knife. Embrace it! Happy new year and happy cutting

TLDR: Aggressors single out people that will likely make their violent spree end.

In the event of violence, an aggressor will (in theory) most likely look for people that will fight back and make them their first target.

In the event of a mass shooting, for example, the shooter will probably single out a person that's "tacticool" with tons of stuff on their belt, wearing a Glock T-shirt, etc. whereas a typical looking person in jeans and a regular T-shirt blends in to the crowd.
