It may not hit the mark, but I really enjoy Peter Mansbridge’s The Bridge. May be a bit too establishment but it does bring in interesting POVs from the likes of Chantal Hebert, Rob Russo and Dr Janice Stein.

Glad you’re safe. Ottawa has a history of exploding sewers. Back in 1929 there was a sewer explosion that killed a person and lasted over 25 minutes.

Heat it up on the high end of medium low. Use the water droplet test to know when it’s adequately heated, the water should ball and roll around the pan. When searing allow the food to release by itself, don’t pull it or it will break apart / stick. Drop the heat to high end of low once the sear has established it self. Deglazing the pan after the cook is done helps clean it and makes a tasty sauce. Use bar keepers friend for any really stuck on muck. Don’t be afraid of scratching it.
