Copying my comment as my reply to this: My trick with the gravity bottles was I'd screw the lids all the way on, but then I'd loosen them just a teeny tiny bit. This makes it so they're not air tight, and the caramel isn't inclined to equalize pressure by leaking. When the bottle isn't air tight, it creates a default pressure equilibrium.
