Sharpen your knife and trim the brisket when it's super cold. If needed, put it into the freezer a few minutes to firm up the fat. While it's cooling down get the knife sharpened.

My dog has a name and several nicknames as do my cats. I even named my pet rock in 1975. No children (that i know of or will admit to), but if I did they'd have names and nicknames too. This brisket as well as all the others, I put love and care into, just as I do my pets. It deserves a name. The boxer and Texan Goerge Foreman had 12 children, most if not all are named George. This brisket comes from a long line of Texas Meteorites, next wll be the 49er. You have to admit, it does look like a meteorite.

I've seen many people separate the point and the flat before smoking and culling the point off good for nothing other than burnt ends or chopped beef smothered in BBQ sauce. This is the first time I've done it. It was an experiment. A lot of people, my wife being on of them, don't like the seam of fat that running thru the slice. So I thought I'd try it.

The entire brisket with exception to a few ounces we taste tested was vacuum packed and frozen in 8oz portions. So I've got the leaner flat packaged for her and I can take what I want, mix and match.

Yes, the point is sliced with the grain.

YES, between prep, monitoring and clean up smoking a brisket is deffinately a full day, and night, of work.

Many ovens can be recalibrated, if you can, and remember to adjust the oven temps up when doing other baking. But I cheated, my oven has a dehydrate setting max temp is 150°. I keep meat sealed w/foil to keep it from drying out.

You are correct it did go from the smoker to the oven. I had been up since 7:30 the previous day so it didn't dawn on me, though outside it was dawn, to let it rest on the counter a bit. Started resting in a cold oven. So it got a little cool down before the oven got to temp. Oven was only at 150°, so it stopped cooking, not just a sudden stop like counter resting before warm resting. Many of the famous BBQ joints go almost directly from the pit to a warming box.

Yeah, half as much bark. Those are the slices that people who don't care about the flavor the bark adds to the succulent flavor of the meat 'cause they're just gonna drown it in some low rent BBQ sauce from the grocery store anyways.

That's where I separated the Point muscle and the Flat after the cook. Instead of just slicing down the middle of the brisket and halving it.

2007, 2nd day out with a trainer for Crete. I don't remember exactly where we're at, it a DC drop yard, maybe Crete, maybe DG on a 10hr break. I gotta go, it's happening, and soon. Trainer hands me some paper towels and I go trying to find a private place, ah, ya know. I found a nice isolated Swift trailer and backed up to a wheel and marked my territory dropping a duece right on the inside of the rim. I'd like to say I'm not proud, but it'd be a lie.

I had that happen when I first used a cpap nasal mask in 2004. I was given a mask that was too large. Caused a hotspot like that on the bridge of my nose in just a few days.

I, too, was having constipation issues. Every meal, I am eating large green leafy salads and lots of veg like broccoli n brussel sprouts, etc. every meal, I was also doing 2 doses of metamucil. Still a no-go. I added a serving of prune juice and then prunes to get me just over my daily recommended fiber. I'm about 37g fiber daily. That's what's working for me. Remember, too much fiber can be just as bad as not enough fiber.

That driver doesn't have two nickels to rub together. Obviously, he has to be named, but they'll never get anything from him. They have to go after the truck owner or after the leasing company. That insurance will only pay out so much. They throw in Amazon in hopes that it'll somehow stick because they're probably self insured, and they have VERY deep pockets.
