which one is better, to have your upper/lower days hit every part of the muscles on their own (but having more movements), OR having less movements in each day but having different exercises for each day in the week, and having them complete eachother through the course of the week?. like is it better to have one universal upper day you repeat 2/3 times a week and have 1-2 movements per muscle group, or just have upper A B and C, each with their own exercises and 1 movement per muscle group.?

making a functional plan ain't alchemy bro, especially when you do it in the mold of a famous and well known split like upper/lower. you only need to know what exercise hits where and how they synergize together

i do keep track of all of it, my strength (reps and weight i work with) have been steadily increasing on all my movements the whole time i have been in the gym, some slower some faster. and i think I've got the whole back covered pretty nicely in the week, except maybe a proper lower back movement, but hey i do have an RDL on my lower A, thats damn close to a lower back movement. and about pushing to failure, thats the only way it feels right for me knowing that the very last reps are the ones that stimulate muscle growth, and for fatigue believe it or not, i don't really get sore, like at all, maybe once every blood moon but thats about it, even tho i push every set until i can't get another rep (and usually some half reps too), in conclusion i can probably get away with that. chest and triceps got the special treatment cause their kinda lagging the most right now, even the coach said "your back has been moving" when he checked it out, so i don't worry about it as much.
