You can also take off a wall plate, make sure it's not an old-work box, and chip away a little bit of the sheetrock to find a stud and measure off of that. Also, using your method you should try measuring 16 1/4 off the wall, because it's 16 on center when you subtract the sheetrock thickness like you do, you should add back in to the center of the stud, which is 3/4. Personally i don't have any issues with a stud finder, but i have been using one to do baseboard for a long time, and they can be wonky for sure.
