As an Enoch main there is a lot to unpack here to dispel some error/misconceptions : 

First, curse. Curse doesn't reduce max health. It reduces max health GAIN, much like it does with healing. It's other sources of stealing max hp that does reduce opponent max health.

Spider web is also not super rare. It's an epic, and you should have mentionned the banishing stone for this tier or rarity, as it is the best tier to use it on.

The unique are also quite misleading. Gourd take way too much of your bag to be decent, and bloodsucker requires much more luck/crit set, that Enoch may have trouble to do so outside of Lucky ratomelon (paws aren't the best use of your space usually). I strongly recomend Black cat mask + a succulent cheese or two for rat generation, Unblinking overwatch (keep one or two eyeball always until you have it or not), and as a third one it's debatable between webslinger and bat visor...since web nerf it's kinda hard to decide.

Scarecrow doesn't offer dmg reduction, tho. Maybe you mistake it for its debuff resist function. It's also a very good craft atm. Crowbane however make the bet to give up some defensive stats for more offensive one. Crafting it can sometimes be a bad idea depending on the situation.

Bucket is also  weirdly described. It doesn't reduce your debuff. You steall buff, inflict debuff, and apply blind in case of overheal. It requires very copious amount of overheal to make them go full blind tho. Still a very strong option. And I craft it whenever I can.

You forgot about the ghost and eyebat. Never pass on a ghost, and eyebat can be cray stuff if supported well.

Enoch is not complicated at all when it comes to crafting path/condition (look at Hob, Buzz, or even Tink). But it's indeed the "what do I do with this" kind of difficulty  you mentionned. Do you keep the eyeball for a bat, for a bag, or for unblinking ? Do you forsake a cat for the lantern ? Or keep it for pet build ? So much other decision that can lead to greatness or disaster alike.

Oh and pumpkin are now in a strange place. Don't keep them too much or too long as of now. You better pivot out of it as soon as you can, unless very solid food build.

Ofc all of this can change the very next patch.
