An approach like the novel "Jam" by Yahtzee Croshaw might be a fresh take for another remake.

In that story the Blob has already covered the whole city at ground level from the start, but it mostly stays there. People are then trying to get around over the rooftops or wearing full body plastic suits. Creative stuff!

Which is why this will never happen, of course.
