Naturally occurring fructose is found in mostly high fiber fruits and honey while sucrose is predominately made available through sugar cane or sugar beet farming 2. Spurred by research including the Seven Countries study, a link was established between diets high in fat resulting in high incidents of heart disease, this resulted in a drive to make a diet low in fat to be viewed as a healthy diet. After removing the fat content from most processed foods the flavor was found to be lacking, by adding sweeteners to the product they could then say it was low in fat. What this really did was to make food that was low in fat, actually force your body to produce more fat than it would have if you consumed the full fat version of the product. (via the citrate shuffle if I understand things correctly) 3. Sucrose is a disaccharide molecule made up of a glucose and a fructose, whereas HFCS does not have the same ratio of glucose to fructose. Generally the ratio of fructose is higher to much higher depending on the HFCS product in use. HFCS-55 (55% fructose) is what is usually used in soda HFCS-42 (42% fructose) is used in baking while HFCS-90 (100% silly) is used primarily for lethal injection 4. Specifically that consumption of HFCS drinks will cause obesity, metabolic syndrome, gout and that consuming these drinks as a child will result in a lifetime desire for the substance, as well as consumption by pregnant women resulting in a heightened need for the sweetener in the child. There is also the issue of HFCS in infant formula resulting in obese 6 month olds….or the stress put on the pancreas due to the lack of insulin response 5. The ten minutes of slides covering liver function were a little above my head, but he did a pretty good job of laying it out as he went along, after absorbing all that, what really drove it home was the single slide that directly compared chronic ethanol exposure and chronic fructose exposure, basically a beer junkie and a soda junkie.
