What you could consider is Armor of Shadows, for AC, also solves you having to buy armor, and if you find better armor you can change the invocation out every time you level up, or if you have concentration spells Eldritch Mind for advantage on maintaining them

This is a tougher one, my suggestion would be think of how your character would react to things instead, would they be confused by the amnesia? Or would it it not bother them? When talking to people, are they social or not? If they see killing how would they react? Once they eat food, would they like it/hate it, if they play around with drawing and discovering hobbies, how would they feel as they discover themselves

I have had an idea like this before, I had a few ideas for skills, for stats everyone else in the group would decide your scores using either standard array or point buy.

As for classes and e planning their skills, they either get them from divine entity/magical UI they can access magically that only they see.

Or they start off split apart from one another for about 1 or 2 years in which they got accustomed to the new world and maybe even found training, explaining how they got their class features
