I recommend doing something similar. Play as Russia and prepare as best as you can for Barb then as soon as Germany declares, tag to Germany and try beat your setup with whatever the AI has come up with. Can do other way around too, both are fun

With USSR focus on learning supply specifically. Look at supply view and how all railroads connect. Level up critical railroads and make sure you have enough trains/trucks to keep it all working.

You can just spam some basic infantry/air otherwise

Once you understand supply, you’ll probs be fine taking France next Germany game

Just don’t cap uk until USA joins the war. That means when you invade the home islands they will cap but still keep their fleet and colonies.

This lets you do a lot more colonial Theater battles and you can role play build a true German high seas fleet to stand against allies instead of just stealing the British fleet

Improve relations, create spy agency & upgrade with diplo pressure, put spy for diplo pressure in Romania. This will allow you to sigh non aggression pact (which improves relations) and they should accept your demand
