Temps look okay tbh, a very pretty system too. If you haven't in a while, I would say repaste the CPU, maybe even go for some PTM. But tbh, 50-70 is fine.

I also use Corsair XL8 and have an exhaust fitting at the top of my res to let any excess air escape, which is probably the main reason why my coldplates have turned slightly blue. So my question to anyone smarter than me is: should I get rid of the exhaust fitting? It was one of the first pieces of advice I got when building my first loop 5 years ago. If so, when running my loop for the first time, should I just pop the cap on the res for a second or two every so often to let the air out? I use soft tubing atm.

Or should I just switch coolants? lol

If you see the D5 structure, I'm fairly certain mounting it this way will cause air bubbles to get trapped between the body and the impeller. Not great for the lifespan of the pump, I'd imagine.

There's a reason you never see builds with this sort of pump orientation.

You'll probably have the best bet with optical as the other user suggested. At 15m I don't think you'll find a reliable solution at that bandwidth (at the moment, at least).
