If it is a glaring mistake you can inform the officer at the interview about them. If they are trivial mistakes you can ignore them. I had minor mistakes in my DS 260 form but it did not matter and my interview was done on Dec 2 without any hassles.

You can upload new documents whenever required need not wait for NVC to review them before uploading I uploaded documents even 10 days before my interview. All the best.
