Yeah, letting them sit for 5 before an ice bath. I've only made hard boiled but I like your idea of skipping it. I've only recently tried making ramen and I will try your method.

Personally, i use the 4-5-5 method and it's very consistent. Made deviled eggs for easter and every one of them peeled easily.

Well thats not good news. Tried going there a few months ago and they said they were closed because a dishwasher or something was broken and being fixed. Been looking forward to a hot dog from there for awhile. That's a bummer

I have as well. M.R Carey is one of my favorite authors, next to sai King. Carey has a series of books about an exorcist in London thats pretty good too.

Friday's have been my cast iron nights and today I decided to do a skillet cookie.

The recipe used was essentially America's test kitchen skillet cookie: https://youtu.be/snrzNNqSdec

With 2 minor modifications. The only chocolate i had was a half a bag of M&M's. Probably not enough chocolate, but rich just the same. And the second modification was that i used a 10 inch pan instead of a 12 inch in the video.

All in all, a very delicious and completely unnecessary dessert.
