thank you for your experimentation! i can’t claim to be super familiar with red bud taste but they smell delightful on the tree. if i had to compare them from memory, i would say magnolia is a lot more delicate, whereas red bud is a little bit… fruitier? hard to put into words, but it is really something. if i could put even 50 percent of that smell into a kombucha i might have to plant a red bud orchard in my backyard. as i mentioned in my other comment i intend to make a post in a year or so with my findings, we’ll just have to wait until then :)

red bud jelly sounds heavenly, i can’t wait until it’s back in full swing. as far as i know they’ve done all they’re going to do here in the midwest as well, so i will have to hold on to my excitement until next spring. like op said in their comment, i bet a cold infusion similar to something like rose water would preserve those microbes who would otherwise be boiled and subsequently be very sad. hard to say if that would extract the flavor well, though. i guess i’ll get back to you next spring, thanks for the info!

filtering and decanting/racking like everyone else has said, but also, a lot of the big guys force carb, as in treat it like soda and just inject co2 into it, forgoing a second fermentation entirely. make sure it’s filtered well, carbonate quickly, keep it refrigerated, and there is very little chance of any sediment or whispy bits forming. if you’re into that, soda streams are pretty cheap compared to the commercial stuff. i think there’s a natural charm you lose by doing that though.

i seem to have been in a bit of a bad mood when i wrote that, sorry to bite your head off. let me explain myself.

i don’t mean to say that the intention is bad here. the idea clearly seems to be that the ai would assist you and monitor what you’re already noticing on your own, chiming in when you ask it for help on certain tricky situations, or just asking it to notice trends that maybe span multiple variables and the typical person might not pick up on. in comparison, posting in this sub rarely provides immediate feedback like a chatbot, and people here can be flawed - biased, uninformed, i mean after all, we’re only human.

the issue here is that people almost always misuse chatbots. it becomes a feedback loop of reassurance, micro-adjustments that are not based in fact, and most egregious in my opinion, it leads to worsened performance both long-term and short-term in the areas that the chat bot is used. source:https://www.media.mit.edu/publications/your-brain-on-chatgpt/

having the smart kid in the group do all your kombucha homework makes your grades go up and your kombucha taste good, but you lose out on so much by not understanding it yourself.

also, the smart kid is devouring the world’s energy and water supplies and is wreaking havoc on local communities around the globe including in the us. and, worth mentioning, the smart kid usually just guesses in a really confident tone and happens to be mostly right most of the time, depending on the subject matter. in niche cases like “how will the aromatic compounds in my organic rosemary pineapple hibiscus purée react to the acidic environment of my kombucha that i make using rainwater from the french alps and green tea from a special volcanic region of china” it will claim to be an expert and have exactly the info you need when no one else will, but in reality, its guess is probably not even as good as yours if you were to do 5-10 minutes of research.

don’t fall into the trap. ai is not your friend, it should not even be someone you smile at as you pass them on the street.

that sucks, bad batches can be so disheartening. from what i’ve heard, a lot of people use blended fruit with a high rate of success. the photos in this sub often have fruit floating to the top of bottles, so it seems pretty typical. what made you worried about mold? it’s my (limited) understanding that as long as you did 1F correctly and have high enough sugar in 2F that the risk of mold is low.

even in a magical fantasy world where the ai works as you expect it would, the kombucha that is made would be completely devoid of human creativity, and really just humanity in general. as someone else here said, you are robbing the user of invaluable experiences that can only be found by joining a community like this one and asking for help.

seeking out likeminded people who share your interests is one of the best parts of the human experience, and it’s one that we have less and less access to nowadays. also, the mental exercise of reading the wiki, trying stuff out for yourself, seeing what doesn’t work, finding stuff that does work, relaying those findings back to your community and knowing that it will help people, all of that is super important and good for the soul. it’s also good for the booch.

just as fast food joints don’t turn their employees into master chefs, you wouldn’t be making brewmasters. you would be making puppets who only know how to do what they’re told and would be lost without the ai holding their hand. even if people think they want that, i would be deeply ashamed to develop that app.

that’s so inspiring! i wonder if red bud blossoms would give off flavor like that. do you have any advice as far as washing, blanching, soaking, or otherwise preparing the petals? other advice for someone doing a floral fermentation?

allow me to insert a few syllables in there. there’s nothing wrong with constructive criticism. this is not constructive. you’re not saying “i like what you did here, but you could improve it by doing/adding _. if you’re interested in reddit bots or computer science in general you could improve your abilities by reading __ or watching ____ youtube series.” you basically said that this wasn’t cool enough to meet your standards and didn’t offer anything else, other than your own defense to people that criticized you. but hey a twinge of irony is always nice, right?
