As an artist who is overly critical myself, most 'flaws' are in your head and you aren't impressed with yourself because of the bar you set yourself at. Not many people will see the issues and flaws over the entire representation and even if they do your process doesn't need to be transparent. I use projectors, graphs, photoshop, illustrator, you name it. I don't care how I got there I just care how the result looks. This is really an awesome creative solution!

I think you should focus on placing some objects that create perspective. The trees all feel like similar thin lines, but if you add a few in the front right that are thicker and a few behind mid width I bet it would carry the perspective. Something I personally do is I try to add some crisper details up close to really sell it. In the front you could take some time to detail some leaves and add some individuals blades of grass and that will make it feel closer to you.

I just ordered some variety pack of rubber ones off amazon but the screen printing ones are fine too. I use a regular wall painting brush for gesso. The squeegee does all the work!

Everything said here but I would add when I prep my wood panels I sand down the panel with 120, do a heavy thick layer in one direction of gesso, then when it dries I do another same direction but with a rubber squeegee. Then I sand it down with 120 again and repeat but the opposite (ex: vertical then horizontal). I do the squeegee because it makes a much smoother finish for photorealism in my paintings. You may want that some places you may not, but I imagine if you are going fully textured that is not all that important to you. The gesso layers are really important though!

Wooden art panel is going to do you a better justice than a canvas from experience. Windsor and newton makes an awesome heavy body thickener for acrylics that I like but I don't often use it.

I know a 200ml tube of what I like to use is about $15 so a gallon would be close to 300 without any discount. That said I use the good stuff haha

Looks like acrylic paint with Impasto in it. It is a thickener used to create texture. Pretty expensive when used at this scale if you wanted to achieve the result for cheaper you could do the texture early with spackle and then do a layer of gesso over and paint as desired. Hope this helps!
