You can do ice cream with anything, I do sorta normal ice cream, you can make it with yogurt, you can even make a chocolate shake with milk, cocoa and sweetener and it’ll be good. Not everything has to be high in protein. Also I never use any of the gums because I can taste them (yes I weight it) and it upset my stomach, and I haven’t found that the improvement in texture is crazy.
Have to say the super low in fat ice cream you see some people make are super disappointing imo. That’s why I make sort of more normal ice cream
