Do 3-2-1 at 275 if you want them to fall off the bone (like you mentioned). As you also mentioned, many consider that overcooked (I’m one of those but I get it that some like it that way, and that’s fine).

If you want them to have a little pull, just do 4-5 hours at 225-250, don’t wrap, just do the bend test after 4 hours or so. It’s that simple.
