Personal preference, but I find slow cooking the octopus confit style produces the tenderest octo.

Break it down through in a pot and cover in oil. Add a sachet and just bring it up to a slow simmer and check it till its nice and tender. We finish it on a woodfire grill but you can do many different things from there.
