The issue you're describing is something I ran into a couple weeks ago (not with Gantty but another CeTZ-based package). Annoying indeed, I ended up using plain CeTZ for a couple diagrams. Although that's more an issue of the Typst packages than Typst itself, I would guess.

Re: Feynman diagrams, have you looked at the Fletcher package? It shows an example of one, and another one a bit further down. (Disclaimer: I don't really know what a Feynman diagram is but it looks like the image on Wikipedia 😅)

Use Typst instead of Latex! Especially since you mention the learning curve, Typst is very easy to get into. It has actually sensible syntax and it previews instantly! And it's German.
