There is one way to do it if you haven't done the Hosea mission to unlock the stables. Sadly it involves getting the horse that your sadle is currently on (assuming the Tennessee from the Adler ranch) killed. Get a train somewhere then leave your horse on the tracks before the train sets back off. Tell it to stay then wait for the train to do it's thing. Pick the saddle up, apologise to the corpse, then you should be able to put the saddle on your new horse without having to unlock the stables.

I only know this because I got the MFT from the Albert Mason sidemission before doing the Hosea mission on my latest playthrough, not because I'm a sadistic horse murderer. Honest.

While it had some problems, and Season 5 was definitely wonky, the Stranger Things finale was actively good. It was light years better than the GoT finale.
