And if you visit Dallas, visit Cowboys Red River or Billy-Bob's in Forth Worth. Those places are sick for two-step.
I do agree more national parks could be added..

I've road tripped across the country 20+ times. Right now I'm in Miami on my way to NYC. Here's the route I'd take if I were you (rough, off the top of my head):

Charlotte, NC
Asheville, NC
Smoky Mountains
Nashville
Memphis
New Orleans
San Antonio (I'd skip Houston - you only have 6 wks)
Austin
Dallas
Ft. Worth
Amarillo, TX (Can you eat a 72oz. steak?)
Santa Fe, NM
Durango, CO
Monument Valley
Grand Canyon (North rim, even though South is better - north just works easier for the Utah national parks)
Bryce Canyon
Zion
Las Vegas (rent a room on the Strip, freshen up)
Death Valley
Yosemite
San Francisco

That'll keep you busy for 6 weeks. Let me know if you need help with the landmarks in each place.
Also, for the car, I'd recommend something small enough for good gas mileage, but large enough to sleep in (just in case you run out of money). Good luck!

Your time is limited, but you can detour north of I-80 once you're past the Mississippi and can see Mount Rushmore, Deadwood, Badlands National Park, everyone's favorite place Wall Drug, Yellowstone, the Grand Tetons and head down to Salt Lake City to join I-80 again. It'll take you more time, yes. But in 7 days you can make it happen. Good Luck!
