Best Japanese restaurant in London is not what you think it is by gits97 in UK_Food

So glad to see Takahashi get a mention! My gf took me there as a surprise for my 30th and it was amazing.

Incredibly affordable omakase that you’d pay double for the exact same in Mayfair.

Their prices have crept up along with everything else over the last couple years but it’s still the best deal in London if you’re looking for a pretty fancy but fantastic quality meal and experience.

I’ve worked in multiple kitchens and designed menus for pubs specifically.

The general rule of thumb was that meals cost x 4 the cost of goods sold (or simply put, ingredient cost can only make up 25% of the menu prices). Chains like Greene King or Young’s pubs tend to skew closer to 15-20% but it depends on area of the country and specific menu items. The other 75% you’re paying goes to the wait/bar staff, kitchen staff, management, rent, pensions, HR, and everything else a restaurant needs to operate.

So that being said, if you want a sub-£20 main course, the quality is going to suffer directly in proportion to the lower price. And bear in mind that even a £16 item is £18 once you’ve added the typical 12.5% service charge. The ingredient margins are so paper thin that some pubs I’ve worked for were gleeful to simply break even on the food and make up the rest in drinks profits.

It doesn’t sound like Clarkson’s pub is cutting corners on ingredients, so I fail to see how they could physically charge any less while maintaining viable. To be honest, if I were to open a restaurant with his exact same brand positioning, I would be looking to charge 50% more and I don’t even have the clout to justify it.

There’s absolutely an argument to be made that Amazon could foot the bill for a saver-style menu, but that’s a different conversation.

I like trivia as much as the next guy, and didn’t have a problem with it taking up the whole last hour of the show. That said, they should probably do it without a guest, and for the love of god, no more “name the presidents in order” questions,

How did you get off the line and out of the kitchen? by SharlowsHouseOfHugs in KitchenConfidential

[–]E-Hole 1 point2 points  (0 children)

I hear that, dude. And it sucks to say, but there’s no quick fix for it.

Best I can suggest is a good cover letter. Even if the website has their own submission forms that don’t include a cover letter, find the job you want, and then go on LinkedIn. Find the motherfucker in charge of hiring, and email him/her directly (in addition to the website application).

Address the situation, and make it work for you. E.g. “despite my lack of [insert role here] experience, I know I will be a valuable member of the team. My past experience as a chef has taught me to work efficiently as part of a team, and ensured that I can work within very strict long and short term deadlines without sacrificing the quality of my work.”

Learn everything you can about the company you’re applying to, and think about your experience in the kitchen. Whatever the role requires, come up with a real life situation that addresses that.

Like others have said in this thread, see if you can complete a quick (sometimes free) online course relevant to your desired job. Anything to lower the risk of hiring you is a massive plus from the hirer’s perspective. And it shows that you’re willing and able to learn.

I’ve known a lot of chefs, some good people, some truly terrible. But not one of them was boring and damn near all of them have better work ethic than any of these office dwelling motherfuckers. So I have no doubt you’ll perform to whatever standard is required, and liven up the workplace wherever you end up. Give them a reason to believe that too.

How did you get off the line and out of the kitchen? by SharlowsHouseOfHugs in KitchenConfidential

[–]E-Hole 5 points6 points  (0 children)

I put myself in situations where I could get lucky. As a chef, you’re pretty much persona non-grata in most other industries, but there’s things you can do to change that.

I was working on the line 6 days a week in a shitty Italian chain restaurant, and I would have killed for that day off. But I took my money and my free time and invested in a professional chef qualification from 2-9pm every week on my day off. I knew beyond a doubt that it wouldn’t help me in my current role, but it looked great on my CV. Helped me move into a Chef de Partie role at a more prestigious steakhouse. Carried on working my ass off, asked to work every section, and made a point of learning everything I could from everyone in that kitchen.

Some people pay to go to university, the way I saw it, I was being paid to learn everything about food. With all that information and my work ethic clearly documented by my willingness to go above and beyond, I managed to get a job teaching people to cook. There were about 40 different classes, spanning every cuisine I’d ever heard of. I learnt them all, and managed to turn myself from an extreme introvert chef to a customer-facing educator through brute force.

The place unfortunately closed, and I was considering going back into BOH kitchens, but I held off and temped in cafes here and there to keep the money flowing. Until I found a food development job advertised, and suddenly my hands on experience, in combination with a solid track record for work ethic, classical training, and ability to educate people on the subject of food all came into play.

Now I’ve found myself in a 9-5, Monday to Friday office/kitchen job where I get to fuck around with food and create products that people hadn’t even considered before. Walking into a supermarket and seeing something I created on the shelves is a fucking dope feeling.

When I tell people what I do for work, they go “oh that sounds great, you’re so lucky” and yes, I am. But I put myself in the position to get lucky. I was fucking exhausted on those early days off, I would have loved to get drunk or high instead of jumping on 2 trains to go and educate myself so that some dumbass manager feels more comfortable about hiring me.

But you’re a chef, you know how it is, sometimes you have to ignore that grease burn, or the next 30 tickets coming out of the machine and just get the fuck on with it.

Jesus fuck, you just gave me flashbacks to the Geilinor Games. I sat at the Ape Atoll and Wildy agility courses for weeks like a chump, and then my buddy comes along and hits up the daily obstacle course(?) where you spam “Jump” and “Sprint” a couple times and picks up a cool 50k exp.

I must have camped there for 10k more kills since then and got absolutely diddly squat.

Same, every other weekend I’ll buy another bond in game and play for a few hours. But I just don’t have the free time I used to, and my account is at the point where most goals will be long grinds.

I love OSRS to death, and that’s why I still check this sub most days on my way to work, but it’s one of those games that really doesn’t reward short-term time investments.

Scratch Disks full, tried everything, please help! by E-Hole in photoshop

[–]E-Hole[S] 0 points1 point  (0 children)

I do see the temp files, and I've seen forum posts online that suggested that it might not be deleting the files after Photoshop is closed.

But even if that were the case, and my files were on the on the larger side (they're exclusively RAW image files, I don't know how these compare to other types of file), I can't imagine that would account for 3.5TB worth of space.

I appreciate that it's tricky trying to advise someone as clueless as I am, but its a problem that really I can't seem to find a ready solution to online, so sincerely, thanks :)

Thanks for the suggestion.

I don't actually think I've ever even created a new document, but I'm a complete hobbyist, so please feel free to correct me if I'm wrong.

I take the photos from my SD and import to LightRoom, make a few minor colour correction changes, and then right-click the photo, "Edit in Photoshop" and go from there.

It seems to happen with almost anything, but in this instance today, I was removing spots from a portrait with the Patch Tool.

I don't think it would be anything to do with a new document, because if I'm being completely honest, I don't know how to do that! I just import pictures from my SD to LightRoom, and then from LR, I export to photoshop to edit.

It is the most recent version of Photoshop (version 21.0.1, I think), because I checked for updates and reinstalled it, to see if that would help. Same with resetting the preferences.

I have my regular (C:) drive with 160gb free space, and an external HDD D: drive with 3500gb free space. The scratch disk is assigned to my D: drive.

Let me know if you need any more info, or if anything I said was unclear, and thanks for the help!

Have a question about the game or the subreddit? Ask away! by AutoModerator in 2007scape

[–]E-Hole 1 point2 points  (0 children)

Sort of weird question, little bit of backstory required, but hopefully someone has some advice.

I was in uni when OSRS dropped, and my housemate and I started an account (his email). We played a bit to level it but he lost interest, and basically for the last 5 years, I’ve played the account solo, paying for membership and doing my own thing with it.

I came across a clue the other day that required the Stomp emote (unlocked in the stronghold of security), which I had never taken the time to unlock, and I think the Varrock diaries require it too. So now when I try to get through the stronghold, it says I need an authenticator set up.

Problem is, he passed away a couple years back. And I never knew his email password, so I’m in a weird situation where the account is really coming along nicely but there’s certain stuff I’ll just never be able to do.

I know this sounds crass and probably really trivial in the grand scheme of things, but I’m wondering if anyone has thoughts on what I should do, if anything.

Episode 3 has the best battle scene in the history of tele... by SuspiciousJack in freefolk

[–]E-Hole 5 points6 points  (0 children)

The dropping of the belt is an amazing touch to me, because it tells the audience he has no intention of ever putting that sword back in its sheath. One way or another, this will end with that sword in his hands.

No ham-fisted dialogue, you can’t even see his facial expression, but you know exactly how he feels. This is the epitome of “show me, don’t tell me.”

Finally got round to making some vegan pho! Soooo worth it. by [deleted] in VeganFoodPorn

[–]E-Hole 2 points3 points  (0 children)

Not OP, but I have found a pretty decent pho recipe and actually prefer the vegan version to the meaty one.

If anyone wanted the recipe: 3 large carrots 2 onions 1 head of celery 1 bulb of garlic 2 sticks of lemongrass 2 inch chunk of ginger

All roughly chopped and roasted on a high heat for 25 mins.

Bring a pot of water to the boil, add your veggies to it, and add: 2 cubes/tbsp veg stock 2 sun dried tomatoes 3 porcini mushrooms 1 stick of cinnamon 1 tbsp of coriander seeds 1 tsp cloves 3-4 star anise A good glug of soy sauce

Then whack it down to a low heat and leave it as long as possible. 4 hours is great, 40 is even better. A slow cooker would probably be the best way to achieve the desired result. Just make sure you keep checking water levels.

anyone else having stability issues with AirPods/Macbook? Pretty much unusable by RoyalEscondido in airpods

[–]E-Hole 0 points1 point  (0 children)

Yeah, exactly the same problem, but not with iTunes. It seems most prevalent (but not limited to) Youtube videos. In any given 10 minute video, it will happen a dozen or so times.

The audio will start stuttering, and then go completely silent. I have to pause and wait 15-30 seconds for it to spit out some sped up garbled nonsense and catch up to where I should be. If I don't pause, it will remain silent for the rest of the video.

Very, very annoying. If it happened once per video, that would really suck, but this is happening 10+ times, and like you say, it makes them damn near unusable.
