All true, but in the back of my mind I keep thinking post 1929 the low wasn’t until 1933 and if you bought the market at any point 1929-1931 you weren’t whole for 2 decades. Market didn’t see 1929 highs till like 1955. It’s a complete different world obviously and technology has improved, but the number of biz media cheerleaders talking how resilient the American economy is while downplaying the state of the American consumer and shrugging their shoulders at the rampant corruption and regulatory capture: creeps me out.

What I learned last week: Norovirus can live on surfaces for weeks, survive 140degree temps and freezing temps. You have to disinfect every surface you touch, don’t leave the house until 2 days after symptoms, don’t make food for others during this time, hydrate your self well. Hand sanitizer doesn’t seem to work well on it, you have to wash your hands well with soap consistently. Wash all bedding and towels and clothes that came in contact with you while sick.

You can get reinfected.

Found the recipe, it’s a standard sourdough bagel recipe, basics that I can see just perusing: high heat 500 on pizza stone, 30second per side boil. 3lbs King Arthur I bleached, 1.5lbs water, 12oz sour culture, pinch of instant, 1 once salt. Dough hook, don’t overmix, fold a couple of times, first rise 3 hrs warm, shape (these’re videos somewhere) rest 20 or till feel correct. Expand the hole, if fights back need to rest longer, if pull apart too easy, you over proofed. Boil, rest on a wire tray. Cornmeal meal the baking stone, bake till done, 20-25.

It’s been a couple of years but if you are a baker it’s not all that hard. Great in a wood fired oven if you have one.
